The 5 recipes I use on repeat
I have a deep love/hate relationship with making dinner. I imagine many people share the same sentiments.
The love side has to do with my passion for cooking. I love preparing meals for my family and cooking has always helped me to relax. Its never felt like a chore, except when I feel creatively drained in other ways.
When I hate cooking is when I feel exhausted mentally and physically, and can’t seem to summon the passion. Its like with any art, sometimes the inspiration just isn’t there. When this happens is when I turn to five recipes that are so easy they’re basically mindless. You’ve likely also seen them before in blogs, Pinterest, etc.
They’re not original and that’s the point. You probably have the ingredients in your pantry right now.
Seinfeld Tuna on Toast. I love tuna salad the most, and I always have multiple cans of tuna in my pantry (oil please, you’re not a cat). I like the Ortiz brand and Safe Catch.
Cherry Tomato Pasta (I don’t use kale). A real lifesaver. This pasta has carried me through stressful nights and even hangovers!
Mushrooms on Toast. You don’t need the sherry in this recipe or the crème fraîche. They might improve it, yes, but with some extra spice the mushrooms hold their own. Also who has sherry just lying around their house?
Emily Mariko Salmon Rice Bowl. We always have sriracha, mayo, and rice in the house. I also usually have a few veggies lying around that can be added to the bowl as an extra “oomph”. Basically all you have to do is get a piece of salmon (Doordash it, I’ve done it.) and cook it.
Everything Salad. If I’m really stuck, this is my safety dish. It can be literally almost all the ingredients above pulled together into a salad. Veggies, a scoop of the tuna salad or the grilled salmon on top, and a creamy dressing (use a Nutribullet or store-bought but only Marie’s, Ken’s, or Brianna’s), and you’re set.
